If you’re used to going to a fish frys during Lent and are missing the food and friends on Friday – we wanted to share our favorite (and super simple) fish and chips recipe for you to make for your family and maybe some friends too.

 

Alton Brown’s Famous Fish and Chips

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 bottle brown beer
  • 2lbs white fish cut into strips or chunks
  • 4 large potatoes
  • Cornstarch for dredging
  • Vegetable oil for frying

 

 Slice potatoes into wedges or slices and place in a bowl of cold water.

 

Combine flour, baking powder, salt, cayenne pepper and whisk in beer until the batter is smooth and free of lumps. Refrigerate batter for 15 minutes.

 

Fill a pan with oil and turn up the heat on stove until it bubbles/cackles.

 

Drain and dry potatoes and submerge in oil for 3 to 4 minutes until they are crisp and golden brown – cook potatoes in batches.

 

Lightly dredge fish in cornstarch and dip in batter. Place fish in oil and cook for 2 to 3 minutes on each side.

 

Serve with tarter sauce and enjoy!

 

We’ve hunkered down but (if your family is feeling well) now is the time to come together with the people around us. Invite a friend to dinner or your neighbors. Although we are all cognizant of the need to adhere to social distancing, we don’t necessarily need to be completely isolated.
