The best part of eating Michigan farm fresh foods is that you don’t need too many ingredients to get a great meal. These recipes served us for a week and the supplemental ingredients were already in our kitchen. My Michigan Fields box has become my weekly version of Chopped and it’s fun!

Chicken, Basil, Tomato Quiche
Quiche is one of my favorite meals to have on hand. It’s good to eat any time of day and you can mix ingredients to use what you have at home. I always make this Martha Stewart pie crust. Saute filling items, sprinkle with cheese and then add eggs (4 with 1 1/4 cup half and half). Bake for an hour at 350 and you’re set for the week. Note: I used one chicken thigh diced into strips for this one.
Grilled BBQ Chicken with Zucchini
My husband grilled BBQ chicken (using drumsticks, thighs + a breast) and put diced and seasoned zucchini in aluminum foil to steam on the grill.
Thai Chicken Curry
We make a lot of Thai food and used the rest of the chicken for a curry, enjoyed over rice. Here’s a similar recipe.
Grilled Pork Tenderloin + Potatoes
Summer days called for outdoor dinner. We grilled the tenderloin and served with mashed potatoes and leftover zucchini.
I did a quick version of this pork carnitas recipe to put on top of nachos, next time I’ll plan better to use in the slow cooker with tacos.
I ordered Zingerman’s Cinnamon Raisin Bread thinking I’d make a French Toast Casserole but it was so delicious we ate it by the slice before I had a chance!
