Whether your little pumpkins are two or twelve, having them fueled and fed will prevent them from turning into little monsters while they are filling up their pillowcases. Below are some Halloween inspired meals that are sure to be wickedly delicious.

 

Pumpkin Face Veggie Platter
This simple recipe will be sure to put a smile on everyone. With just a few ingredients and a simple assembly, you can be sure the kids will get some veggies (or fruits) in their meal. Not only is this healthy, but it’s a fun and creative way to get kids involved in prepping this dish.

 

Blood soup with grilled cheese fingers
Halloween is the only night of the year where you can call tomato soup Blood soup. With so much activity going on, canned soup is an easy way to make a Halloween themed meal. Just keep an eye on the sodium content and look for the labels such as “reduced” , “light” or “low” in sodium. This soup will go great with grilled cheese bloody witch fingers. To make them, after the grilled cheese is done, cut into 4-6 long triangles. On the tip of the bread, place a little bit of ketchup to make it look as if a finger is bleeding. Everyone will enjoy, unless they are too scared to try!

 

Candy Corn Quesadilla
A little twist on the traditional quesadilla makes for a fun Halloween dinner and is a great dish to have the kids help make.  Simply, add refried beans, veggies, or grilled chicken on top of a whole wheat tortilla. Place the second tortilla on top, followed by three types of cheese;  a white such as mozzarella, a dark orange such as mild or sharp cheddar and light orange such as Tillamook. Sprinkle the shredded cheese (starting with the white in the center) to resemble candy corn. Place in oven at 350 for about 10 minutes. Once done, cut into triangles and serve and enjoy! This would pair nicely with a side of plain Greek yogurt (as a substitute for sour cream) and guacamole.

 

Clementine Pumpkin
Whether it’s scary or silly, these clementine pumpkins are sure to be cute. Taking a marker, draw a pumpkin face on the clementine. Placing the clementines in a bowl on the table during halloween dinner will be a sneaky way to try and get a piece of fruit in at the meal…before the candy takes over!
